Carolina Kitchen: Brunswick stew

Ingredients

  • 4T unsalted butter
  • 2 cloves garlic minced
  • 1 onion, chopped
  • 1 can fire roasted tomatoes
  • 5 cups homemade veal stock
  • 1 C. BBq sauce
  • 2 T Worcestershire sauce
  • 1 pound pulled pork
  • 8 oz. cooked potatoes
  • 8 oz. frozen corn
  • 8 oz. frozen lima beans
  • Salt & pepper to taste
  • Hot sauce to your liking

Instructions

  • Melt butter, sauté onions, potatoes, lima beans and corn.
  • After a few minutes add all other ingredients.
  • Bring to a boil & then down to a simmer.
  • Cook for about 1-1.5 hours. Serve with cornbread
