Carolina Kitchen: Chayote lime slaw

Ingredients

  • 3 each chayote squash
  • 3 each fresh limes
  • 1/2 bunch cilantro
  • 1/2 tbsp. Cumin
  • 1/2 tbsp. Coriander
  • 1/4 cup avocado oil
  • 1 tbsp. Apple cider vinegar
  • To taste salt and pepper

Instructions

  1. Wash all vegetables.
  2. Julienne the squash.
  3. Cut the limes in 1/2 and juice into a bowl with the squash.
  4. Chop cilantro and add to bowl with spices, vinegar and avocado oil.
  5. Season to taste.
