Carolina Kitchen: Homemade Pico de Gallo

Ingredients

  • 2 Cups tomatoes, seeded and diced
  • 2/3 Cup red onion, minced
  • 1/2 Cup poblano pepper, seeded and minced
  • 1 TBS garlic, pressed or minced
  • 3 TBS fresh cilantro, minced
  • 3 TBS lime juice
  • 1 tsp each: ground cumin, salt
  • 1/2 tsp cayenne pepper (optional)

Instructions

  1. Mix all ingredients together in a bowl.
  2. Allow to rest for flavors to meld for one hour in the refrigerator, covered.
  3. Serve within twelve hours for best freshness.
