- 2 Cups tomatoes, seeded and diced
- 2/3 Cup red onion, minced
- 1/2 Cup poblano pepper, seeded and minced
- 1 TBS garlic, pressed or minced
- 3 TBS fresh cilantro, minced
- 3 TBS lime juice
- 1 tsp each: ground cumin, salt
- 1/2 tsp cayenne pepper (optional)
- Mix all ingredients together in a bowl.
- Allow to rest for flavors to meld for one hour in the refrigerator, covered.
- Serve within twelve hours for best freshness.
