Carolina Kitchen: Mango salsa

Ingredients

  • 1 fresh mango, diced into small cubes
  • 1/4 cup red bell pepper, coarsely chopped
  • 1/4 cup green bell pepper, coarsely chopped
  • 1/2 jalapeno or serrano finely chopped pepper
  • 1 tablespoon extra-virgin olive oil
  • 1 clove garlic minced
  • 2 tablespoons red onion finely chopped
  • 2 tablespoons chopped fresh cilantro
  • 2 teaspoons fresh lime juice
  • pinch red pepper flakes
  • salt + pepper

Instructions

Mix everything together and let sit for a half hour.
