Carolina Kitchen: Marinated heirloom tomato salad

Ingredients

  • cherry tomatoes, halved
  • asparagus, thinly sliced
  • carrots, thinly sliced
  • chopped parsley, basil and scallions
  • lemon olive oil
  • salt & pepper

Instructions

  • Toss all ingredients in a bowl. Serve with arugula.
  • It's best to marinate the tomatoes for at least 6 hours before serving
