Carolina Kitchen: Mediterranean roasted chicken

Ingredients

  • 2 chicken quarters
  • 2 oz. Olive
  • 2 oz. Sun-dried tomato
  • 2 garlic cloves thinly sliced
  • 2 oz. Feta cheese
  • Cilantro leaves
  • 2 oz. Red onion
  • 4 oz. Artichoke hearts
  • 2 oz. Garbanzo beans
  • 4 oz. Chicken stock
  • Unsalted butter
  • S & p to taste

Instructions

  1. Place all ingredients in a cast iron or baking dish
  2. Bake for 40 minutes and woo-lah!
