Carolina Kitchen: Quinoa parfait

Quinoa for Parfait


  • 1 cup white quinoa
  • 2 cups water
  • 1 cinnamon stick
  • 1 Tbsp ground cinnamon
  • 1 Tbsp butter
  • 1 tsp salt
  • 1 cup fresh seasonal fruit
  • 1 cup yogurt
  • 2 cups granola mix

Equipment: Measuring utensils, small pot with lid, slotted spoon, small sheet pan, parfait glass.


Place quinoa, water and cinnamon stick in a pot together and bring to a boil. Reduce to a simmer (low heat) and cover with a lid. When quinoa is finished cooking, gently fold in ground cinnamon, butter and salt with slotted spoon. Place quinoa on sheet pan to cool down. We will then layer the parfait glass with quinoa, seasonal fruit, yogurt and granola mix.

Quinoa parfait assembly


  • cinnamon Quinoa ½ cup
  • granola ½ cup
  • Yogurt ½ cup
  • Seasonal Fruit (strawberries, blackberries, raspberries) ¼ cup

Equipment: 12 oz glass, rubber spatula, three small spoons


  • Start with ¼ cup of cinnamon quinoa placed into parfait glass, followed by ¼ cup of yogurt and granola in layers. Top off with one row of seasonal fruit.
  • Repeat step one and you should have two layers of quinoa, yogurt, granola and seasonal fruit.
