Carolina Kitchen: tacu tacu (Peruvian beans and rice)

Ingredients

  • 1 c cooked rice
  • 1 1/2 c hot cooked black beans
  • 1/2 c cheddar cheese
  • 1/2 c mozzarella
  • 1 c rotisserie chicken

Instructions

  • Mix all the ingredients together, refrigerate for about 1 hour
  • Shape mixture into 2-oz balls and pan fry them.
  • Serve with salsa or the sauce of your choice
