Spicy corn maux choux

Makes about two cups

Ingredients:

  • 3 ears Corn
  • 1/2 each Onion
  • 1/2 each Red Bell Peppers
  • 1 stalk Celery
  • .5 Tbsp. Garlic
  • 2 oz Heavy Cream
  • .5 Tbsp. Hot Sauce
  • .5 Tbsp. Butter
  • To Taste Salt and Pepper

Method:

  1. Wash all the vegetables.
  2. Shuck the corn and cut the kernels off the cob.
  3. Small dice the celery, red bell peppers and onion.
  4. Mince the garlic.
  5. Start a medium size saute pan on medium heat and add some cooking oil.
  6. Add garlic to the pan then add the rest of the vegetables.
  7. Season with salt and pepper.
  8. Saute for a couple minutes then add the crea, and let reduce until thick.
  9. Finish with hot sauce and butter.
  10. Adjust seasoning if needed.
