Carolina Kitchen: Veal marsala

Ingredients

  • Boneless Veal Cutlet
  • 1/2 cup of heavy cream
  • 1 tbs of fresh thyme minced
  • 1 tsp fresh garlic minced
  • 1/4 tsp black pepper
  • 1/4 tsp white pepper
  • 2 oz marsala wine
  • 1/2 tsp kitchen bouquet
  • Seasoned flour recipe:
  • 1 tsp coarse ground sea-salt
  • 1/2 tsp black pepper
  • 1/4 tsp white pepper
  • 1/2 tsp each granulated garlic and onion.
  • 1 cup of all-purpose flour

Instructions

  1. Pound out a boneless veal cutlet.
  2. Dredge in seasoned flour.
  3. Sear in oil, once seared remove and dump excess oil.
  4. Add your Mushrooms, Garlic, fresh thyme, heavy cream,deglaze with marsala wine, add kitchen bouquet. Reduce, add the Veal and enjoy!
  5. Serve with fresh thyme, Square Root spiced pecans, and fresh shaved parmesan.
  6. Serve with Square Root White Truffle, Garlic, and Rosemary whipped potatoes. Pan seared Carrot
